This salad is a household favorite in my home! It’s so versatile, the sweet and savory additions of blue berries, apples, and red onion offer extra pallet quenching flavor. And although it’s especially refreshing as main dish in spring or summer, it can be also be served without fruit as a meat or pasta accompaniment all year long! Ingredients:
Salad:
- 2 10oz bag of spinach
- 1 1/2 pt of sliced strawberries
- 2 cups of crushed walnuts
- 2 cups goat cheese crumbles
Dressing:
- 8 tbs Olive oil
- 2 tbs Lemon Juice
- 1 tb Apple cider vinegar
- Dash of salt
- Dash of pepper
Directions:
Add spinach, strawberries, walnuts, and goat cheese crumbles in large serving bowl. Combine olive oil, lemon juice, apple cider vinegar, salt, and pepper in a small mixing bowl and stir well. Toss the salad until leaves are lightly dressed. Serve and enjoy!
This recipe yields approximately 40 small servings.
